Naturhotel Forsthofgut: Four Centuries of Alpine Heritage, Reimagined as Conscious Luxury

R.May·29 October 2026

Some hotels are built. Others are grown. Naturhotel Forsthofgut, nestled between the Leoganger Steinberge and the Kitzbuhel Alps in the Salzburg region of Austria, belongs firmly in the latter category. What began in 1617 as a simple forestry operation has evolved across five generations of the Schmuck family into a five-star nature hotel that still carries the DNA of its origins, not as a marketing narrative but as a lived philosophy that shapes every design decision, every menu and every guest experience.

Today, Christoph and Christina Schmuck steward the property, having taken the reins in 2006. Under their guidance, Forsthofgut has grown from a family guesthouse into a destination that draws travellers from across Europe and beyond, open 365 days a year, ski-in and ski-out in winter, hiking and biking paradise in summer. But the scale of the operation has never eclipsed its intimacy. The hotel remains, at its core, a family home that happens to welcome guests.

Rooted in the Forest: Heritage and Architecture

The story of Forsthofgut is inseparable from the landscape it occupies. The original estate, bearing the house number Hutten No. 2, was one of the first buildings in the Leogang district, a year-round forestry and agriculture operation. The connection to the forest was not something the hotel adopted as a theme. It was the starting point, the literal foundation upon which everything else was built.

That heritage manifests in the architecture, which uses authentic natural materials, regional stone and timber, to dissolve the boundary between interior and exterior. The waldHAUS, constructed in 2011, the Seehaus lake house added in 2021, and the Berg Loft Suites opened in 2025 all share a design language that embraces the surrounding forest and mountains rather than competing with them. Glass walls, warm wood tones and natural textures create spaces that feel less like rooms and more like extensions of the landscape.

For Christoph Schmuck, who grew up on the property surrounded by animals and forest, this continuity is personal. The hotel should be an anchor, he says, for the family, for the guests and for the employees, something steady in increasingly confusing times. His wife Christina brings her own rural hospitality background to the interiors, combining traditional Alpine elements with a refined modern touch that avoids the cliche of rustic chalet design.

The waldSPA: 5,700 Square Metres of Forest Wellness

The waldSPA is the physical and spiritual heart of Forsthofgut. Spanning 5,700 square metres, it is one of the largest hotel spas in the Alps, but size alone does not explain its significance. The spa is divided into dedicated adults-only and family zones, ensuring that the experience of deep stillness and the experience of family enjoyment never compromise each other.

The recent addition of the waldSPA Health area marks a significant evolution. Where traditional spa offerings focus on relaxation, waldSPA Health introduces longevity as a guiding principle, combining cutting-edge treatments with nature-inspired rituals. The facility includes a cryotherapy chamber by Druschke that reaches minus 110 degrees Celsius, IHHT altitude training therapy, NAD+ infusions and PEMF therapy beds. These are not wellness buzzwords applied to a hotel spa. They are medical-grade protocols integrated into a setting that still feels unmistakably like a forest retreat.

The adults-only area features a bergFRISCHE sports pool, saunas, steam baths and treatment rooms, all open until 10pm each evening for Late Night SPA. The family zone, renovated and expanded in 2021, offers its own programme of water-based activities and treatments designed for younger guests. The philosophy is simple: wellness should be accessible to every guest, regardless of age, but the depth of stillness that adults seek should be protected.

Three Kitchens, Six Toques: Alpine Gastronomy Redefined

The culinary operation at Forsthofgut is unusual in its ambition. Most luxury hotels operate one signature restaurant alongside a main dining room. Forsthofgut runs three a la carte restaurants, each with its own identity, and all three have been awarded Gault Millau toques, the Austrian equivalent of Michelin stars. Six toques in total, an extraordinary concentration for a single property.

silva, the fine dining restaurant led by Chef Michael Helfrich, opened in December 2024 as the successor to the acclaimed echt. gut essen. The concept, Taste the Forest, treats the surrounding woodland not merely as inspiration but as its essential raw material. The menu draws from forest foraging, seasonal berries, nuts and fungi, combined with technical precision and creative freedom. Falstaff awarded silva three forks in its 2025 guide.

Restaurant 1617, named for the year the estate was founded, celebrates traditional Austrian cuisine with regional produce and classic techniques. Two toques. From December 2026, it will relocate to a new home directly on the ski slope, with three wood-panelled dining rooms, a tiled stove, an open fireplace and ski-in, ski-out access.

Mizumi, the Japanese lake restaurant, brings an Austro-Japanese fusion concept to the Alps. One toque and four Falstaff forks. The juxtaposition of Japanese precision with Alpine ingredients should feel jarring. Instead, it feels inevitable, a demonstration that terroir is about quality and respect rather than geography alone.

The main CUISINE offered daily gives guests three paths: Alpine-Mediterranean, drawing from the seven Alpine countries, R50, with ingredients sourced within a 50-kilometre radius, and fully vegan. The Mauthof farm supplies approximately 70 per cent of the vegetables used across the property, roughly five tonnes of carrots alone each year. The Delicacies Market, a package-free buffet of bakery, dairy, butcher stalls and salad bars, turns breakfast into a slow, exploratory meal.

Sustainability as Inherited Practice

Sustainability at Forsthofgut is not a programme. It is an inherited practice, shaped by the same family that has farmed this land for four centuries. The property is powered entirely by renewable energy, combining geothermal, biomass, photovoltaic and air-source heat pumps. Water comes from the hotel's own spring. Cleaning products are biodegradable. The 30,000-square-metre garden includes an organic bathing lake and relaxation islands.

The hotel's wildlife enclosure, spanning five hectares, and the on-site horse riding stable reflect a belief that nature is not something to be observed from a distance but something to be lived alongside. Long-standing partnerships with regional farmers and suppliers, including the Stechaubauernhof farm, which has been a pioneer in organic farming for years, ground the culinary operation in a supply chain that is both local and transparent.

Looking Ahead: Winter 2026/27 and Beyond

Forsthofgut is not standing still. From December 2026 through summer 2027, the property will introduce a series of enhancements: the relocation of Restaurant 1617 to the ski slope, a new 20-seat Grill restaurant with a fire-driven sharing concept, an on-site ice skating rink surrounded by snow-covered forests, a redesigned lobby, and new room categories.

These additions share a common thread. They deepen rather than broaden the experience. The Grill restaurant, with only 20 seats, is deliberately intimate. The ice rink, set against the Leogang Mountains, is designed to feel like a natural extension of the winter landscape rather than an amenity bolted onto a hotel. The new rooms and suites will continue the architectural philosophy of using natural materials to frame rather than dominate the surroundings.

The vision is to stay personal and deep, expanding the depth of the experience rather than the scale of the property. For a hotel that has spent four centuries growing from a forestry station into one of Austria's most celebrated nature retreats, that vision is not a strategy. It is a continuation.
