There is a restaurant in Ho Chi Minh City that does not simply serve Vietnamese food. It asks where that food comes from, what allows it to survive, and what happens when the knowledge behind it is passed from one generation to the next. Inside a restored 20th-century French villa on Nam Ky Khoi Nghia, CoCo Dining has built its identity around those questions. The restaurant seats around fifty guests, but its ambitions extend far beyond the dining room.

At the centre of it is Chef Võ Thanh Vương, whose cooking begins with Vietnam but rarely stops at the dish itself. Born in a coastal fishing village in Phan Thiet, Vương approaches cuisine as a form of research — one shaped by geography, memory, family, ingredients and the people who have carried culinary knowledge forward.

His current tasting menu, Lưu Tích, is the latest expression of that philosophy.

A Cuisine That Refuses to Stand Still

The question CoCo Dining asks is deceptively simple: how can a restaurant preserve culture while allowing it to evolve? We don't view our cuisine as avant-garde, but rather as a progressive exploration of Vietnam's culinary identity through research, storytelling, and contemporary technique. Chef Vương sees Vietnamese cuisine as a living archive, continuously shaped by memory, geography, and lived experience. Rather than reinventing traditional flavours, he uses modern craftsmanship to refine and translate these cultural traces into a contemporary culinary language rooted in Vietnamese identity. The result is a restaurant where each menu is not a standalone collection but another chapter in an evolving story.

Three Seasons, One Continuous Story

Luu Tich is Season 7, but it is the third in a connected trilogy that traces a single arc. Each menu begins with a question about Vietnam, a place, a memory, an ingredient or a forgotten tradition that we want to understand more deeply. Ra Khoi (2024) looked inward, returning to where Chef Vương's story began: the sea, childhood, survival. Luu Hanh (2025) looked outward, travelling Vietnam by rail through eleven regions and eleven courses, revealing how geography and community shape a nation's food. Now Luu Tich looks deeper still, examining not places or ingredients but the systems of knowledge that allow a cuisine to endure: cultivation, preservation, synthesis, heirloom, and sweet memory. The seed planted at sea has grown into a living tree, one that continues to bear fruit because its roots remain firmly connected to where it began.

A Villa That Evolves With the Menu

CoCo Dining is designed as an extension of the story told on the plate. From the opening aperitif at CoCo Bar to the rhythm of service throughout the meal, every element is thoughtfully choreographed to immerse guests in the narrative, making the experience as memorable as the cuisine itself. Much like the course, the space evolves with every new chapter. Interiors, artworks, and visual details are refreshed annually to reflect the theme of each tasting menu. The setting, the service, and the seasonal shift all serve the same purpose: to make the guest a passenger in the story rather than a spectator at the table.

A MICHELIN Star That Affirms, Not Defines

The recognition came early and has held. MICHELIN Selected in 2023 and 2024, then a Star in 2025, retained in 2026. TATLER Best 2026 followed. For a restaurant so rooted in Vietnamese identity, the international validation matters less for ego than for platform. Recognition such as the MICHELIN Star and TATLER Best gives restaurants like CoCo Dining a platform to share Vietnam's culinary heritage with an international audience and to challenge perceptions of what Vietnamese fine dining can be. The accolades open doors. They invite diners who might never otherwise encounter a philosophy that treats Vietnamese cuisine not as a fixed tradition to be replicated but as a living archive that is still being written.

The Living Archive

Through Luu Tich, CoCo Dining asks what Vietnamese cuisine is actually built on. Not the dishes alone, but the knowledge underneath them. People often think of an archive as a place where history is stored. But for us, an archive is alive. Every generation inherits knowledge, interprets it through their own contemporary lens, and leaves a new layer of custody for the next. The menu moves through five stages of knowledge: cultivation (Canh Tac), where it begins; preservation (Bao Ton), where it endures; synthesis (Giao Thoa), where it evolves; heirloom (Truyen Thua), where it is entrusted; and memory (Ky Uc), where it lives on. Each course is research translated into an edible experience. The invitation to the World Gourmet Festival 2026 in Bangkok is the latest recognition that this approach resonates beyond Vietnam's borders.

Ingredients survive because people choose to remember them. Heritage lives not on paper, but in repetition, family rituals, and shared tables.

Mam Com celebrates the art of preservation before memory fades: the cultivation of Nang Thom rice, the preservation of salted Ca Suu and Mam Chao, and the mastery of the fried rice technique. Together, they form overlapping traces of lived Vietnamese culture.
