There is a restaurant in Saigon that does not ask you to be impressed. It asks you to be welcomed. Housed in an Indochina Art Nouveau villa on 125/12 Nguyen Cuu Van, Gia Dinh Ward, Nephele takes its name from the cloud nymph of Greek mythology, a figure associated with shelter, comfort, and quiet generosity. The name is not decorative. It is the blueprint. From the moment guests arrive at Nephele through Ethereal Bar, every detail is designed to make them feel like they have been here before.
The house earned MICHELIN Selected status in June 2025 and the MICHELIN Sommelier Award for co-founder Paul Vo. TATLER named it Best New Restaurant the same year. The accolades are real, but the ambition is older and simpler: to cook Vietnamese ingredients over wood fire with precision and honesty, and to serve them in a space that feels like home.
The Language of Fire
Wood fire is the oldest cooking method known to any kitchen, but at Nephele it is something more precise. Chef Francis Thuan Tran, born in Buon Ma Thuot in the Central Highlands and trained at One Star House Party pop-ups, Evett Restaurant in Seoul and The Agrarian Kitchen in Tasmania, treats fire as a language rather than a technique. Fire has always been one of the oldest ways of cooking, but for us, it is much more than a technique. It is a language that allows the ingredient to speak more honestly. Every type of wood burns differently, producing its own heat, aroma, and rhythm. Rather than masking an ingredient, the fire enhances its natural sweetness, depth, and character.
Vietnam is rich in seasonal produce and regional terroir. The Nephele kitchen does not seek to transform these ingredients beyond recognition. We believe these ingredients don't need to be transformed beyond recognition, they simply need to be understood and treated with respect. Wood fire gives them that opportunity. Smoke, char, and caramelisation become the bridge between nature and interpretation. It is how we celebrate Vietnamese terroir, not by overpowering it, but by revealing what has always been there.
A MICHELIN Star That Doesn't Change the House
The MICHELIN Guide arrived early. Within months of opening, Nephele was Selected. Paul Vo took the Sommelier Award. For a debut restaurant in a city still establishing its fine-dining identity, the recognition was swift and significant. But the team's response was measured. Being recognized by the MICHELIN Guide is an incredible honour, and we're deeply grateful for it. It affirms the hard work and passion that every member of our team puts into Nephele every single day.
From the beginning, Nephele was never envisioned as simply a restaurant. We never envisioned Nephele simply as a restaurant, we envisioned it as a house. The cloud nymph story became the foundation of the philosophy. Hospitality is not a standard of service, but the very soul of the experience. Every guest who walks through the doors becomes part of that house. From the warmth of the welcome and the conversations around the table, to the way each dish is presented and every detail is considered, the goal has always been to make people feel genuinely cared for. The food is one expression of that philosophy, but hospitality is what ties everything together. The MICHELIN recognition encourages the team to keep evolving, but it does not change the direction. If anything, it reminds us to stay true to the values we started with while constantly refining every aspect of the experience.

A Cellar That Tells the Story
Paul Vo's 2025 MICHELIN Sommelier Award is not a sidebar achievement. Paul and Chef Francis first met in 2017 at a wine tasting event. Both hailing from Dak Lak in Vietnam's Central Highlands, they quickly found common ground in their shared roots and passion for hospitality, laying the foundation for a partnership that would eventually lead to Nephele. Paul's wine programme was built to continue the story each dish begins, not to compete with it. Wood-fired cuisine often carries depth, smoke, and intensity, but that doesn't necessarily call for bigger or heavier wines. Sometimes it's about freshness that lifts the palate, sometimes texture that mirrors the dish, or sometimes a subtle minerality that echoes the ingredient's origin. The cellar gravitates toward growers and winemakers who respect their own terroir, many of them practising organic or biodynamic viticulture, because Nephele shares the same belief: great products begin with a deep connection to nature.
The pairing is never a separate course. We don't see wine pairing as a separate course. It is another layer of storytelling. Every glass is chosen to deepen the guest's understanding of the dish, the ingredient, and the journey we're inviting them to experience. Junior sommelier Hoai Van works alongside Paul, and together they treat each pairing as a continuation of the fire, not a contrast to it.
A House With Three Chapters
Dining at Nephele is not a single room experience. The villa unfolds across three distinct spaces, each one a chapter. Guests are first welcomed at Ethereal Bar, a living room where conversations begin over cocktails crafted by head bartender Hung Le, whose classic cocktail with a twist has become one of the house's quiet signatures. They then move to the Kitchen Hall, where the open wood-fired kitchen and the ceiling draped in traditional do paper evoke the feeling of dining beneath the clouds, bringing guests closer to the energy of the culinary team. Finally, the Private Dining Room offers a more intimate setting, with flowing cloud-inspired details that create a quiet space for deeper conversations and shared celebrations.
The architecture itself reflects the philosophy. Organic Art Nouveau curves meet Art Deco geometry, creating a dialogue between nature and craftsmanship, much like Chef Francis's cuisine, where Vietnamese terroir is interpreted through contemporary techniques and the primal element of wood fire. The same philosophy extends to the tableware. We carefully select handcrafted ceramics and natural materials that never distract from the ingredients but instead frame them with quiet elegance. Rather than drawing attention to themselves, these elements allow the cuisine, the wine, and the hospitality to remain at the centre of the experience.

Between Sea and Fire
Every seasonal menu at Nephele begins with a journey. Chef Francis has spent months living alongside local communities, discovering regional ingredients, traditions, and flavours. Not to recreate them, but to understand the stories behind them. This season, the inspiration comes from Vietnam's coastline. Surrounded by over 3,000 kilometres of shoreline, Vietnam offers an incredible diversity of coastal ingredients that often go unnoticed. The new interpretation of trevally is accompanied by edible coastal plants: samphire, ogo seaweed, and sea purslane. Wood fire completes the story, gently revealing the natural character of each ingredient.
The seasonal shift tells its own narrative. Earlier, trevally was paired with nasturtium and strawberries, celebrating peak strawberry season with bright, vibrant flavours. Summer brought a turn toward Binh Thuan Province and its traditional goi ca, served with an abundance of local herbs, marigold leaves, and a sweet-sour fish sauce. The Nephele reimagining pairs trevally with coastal plants, creating a fresher, more saline expression. The storytelling extends beyond the flavours: the sauce is poured tableside from a seashell, while the dish is presented against a coral-inspired landscape, inviting guests to experience not only the taste of Vietnam's coastline but also its atmosphere and beauty.
Wood fire demands precision unlike any other cooking method. We don't use fire to overpower an ingredient, we use it to reveal its true character. For seafood in particular, the right heat can enhance natural sweetness, preserve delicate texture, and add subtle layers of aroma without masking freshness. Every decision, from the choice of wood to the distance from the flame, is made with one purpose: to let exceptional ingredients speak for themselves. We see fire not simply as a cooking method, but as a medium that connects nature, craftsmanship, and the ingredient in its purest form.
Nephele is an invitation to discover Vietnam through fire, terroir, and heartfelt hospitality, where every detail is thoughtfully crafted to make you feel at home.
